Chef series: sustainable culinary sensations

November 29, 2023 - Join Six Senses Ninh Van Bay for Culinary Sensation Week from February 29 to March 5 and Six Senses Samui for a Year of Sustainable Culinary throughout 2024. Talented chefs turn the heat up on a journey of flavor, artistry, and innovation.

Culinary Sensation Week: Six Senses Ninh Van Bay, Vietnam

Our exceptional chef series is back for another week of foodie fun from February 29 to March 5, 2024, starting with all four chefs coming together on opening night to share their culinary passions and curate an exclusive 8-hand dinner. Over the remaining days, each chef will individually showcase their distinctive culinary artistry, providing guests with an unforgettable journey through the world of flavors and innovation.

What's on:

  • February 29: Opening cocktail ceremony to welcome and introduce all chefs and their creations of canapés.
  • March 1: Exclusive 8-hand dinner thoughtfully curated by four chefs.
  • March 2: Modern Vietnamese pop-up dinner by Chef Nghiem Minh Duc of Nous Dine, a Michelin-selected restaurant in Ho Chi Minh City. Chef Duc is a master of blending local ingredients with his boundless creativity, transforming them into unforgettable culinary experiences. 
  • March 3: Contemporary Korean pop-up dinner by Chef Chi Joon Hyuk of Labri, a Michelin-selected restaurant in Hanoi. Chef Chi Joon Hyuk embraces the beauty of fusion cuisine from his home country of Korea, combining French gastronomy cooking techniques with quintessential oriental influences to express his background.
  • March 4: Innovative Thai pop-up dinner by chef SOM from SOM’s Table Restaurant in Hua Hin, Thailand. Renowned for her artistic approach to fine cuisine, Chef SOM places “flavor first” at the heart of her culinary creations, ensuring every dish is a sensory delight.
  • March 5: Australian pop-up dinner by Host Chef Timothy Goddard of Six Senses Ninh Van Bay. Chef Timothy is dedicated to incorporating our Eat With Six Senses sustainability ethos into his culinary creations, which blends eco-conscious elements with fresh, seasonal, and wholesome ingredients to ensure you leave the table feeling better than when you arrived!

Sustainable Culinary: Six Senses Samui

Six Senses Samui is stepping into the new year with an initiative that embodies our commitment to sustainability and Eat With Six Senses philosophy through “A Year of Sustainable Culinary”. This series of quarterly culinary events throughout 2024 will not only tantalize the taste buds but also champion environmental stewardship, each focusing on a specific aspect of sustainability.

What’s on:

  • January: “ABC – A Blissful Culinary by Chef Deepanker” of Haoma. With one Michelin Star, Haoma is also the only Michelin Green Star restaurant in Bangkok, recognized for sustainability. Truly inspired by Farm on the Hill, this event will showcase dishes that Chef DK will prepare exclusively with ingredients sourced and inspired by the farm, local farmers, and artisans.
  • Second quarter: H&H – Happy Harvest” – Embracing organic produce and featuring an array of mouthwatering dishes prepared entirely from organic ingredients, we prove that sustainable dining can be both delicious and satisfying, especially when paired with organic and sustainable wines.
  • Third quarter: “M&M – Marine to Mountain Munches”, based on a collaboration between Chef Kien of Six Senses Samui and Chef Isa of Six Senses Bhutan. Chef Kien will emphasize the importance of protecting marine life while Chef Isa will focus on foraging the forest of Bhutan and bringing its flavors to the plate with local ingredients.
  • Rounding off the year: “W&W – Waste You Would Want”, will focus on zero-waste gastronomy, where reducing food waste is a crucial part of the mission, as are innovative ways to transform leftovers into gourmet delights and luscious drinks. Diners will be inspired to adopt eco-friendly practices in their everyday lives.
